This article presents the Spanish translation of the Bulletin of the IIR reference 1997-1544. The principles emphasize the need to understand the physiology of living tissue, the importance of convenience and quality of the product, the role of the consumer in quality assessment, the difference between purchase decisions and consumption satisfaction, the overemphasis on shelf life in distribution, the less than ideal conditions that exist during retail and home storage, and a need to re-evaluate how to measure quality.
