Summary

The paper considers the current state of the art in the refrigerated and thermal processing during production of Bulgarian yoghurt and other yoghurt-type products. An innovative concept is proposed for improved temperature control and resulting product shelf-life extension by using an environmentally benign air-cycle heat-pump technology for combined heating and cooling along the yoghurt production chain.
