Shelf-life prediction of refrigerated prepacked fresh meat.

Summary

Temperature is one of the most important factors determining the shelf-life of fresh meat, and a strict temperature control during production and distribution has an important effect on the shelf-life of fresh meat. Predictive models offer the opportunity to quantify the effect of different storage temperatures on the shelf-life of fresh meat. The shelf-lifes predicted using the model are in good agreement with the shelf-lifes obtained in practical situations. Shelf-life predictions can be done very easily, quickly and cheaply, using only a computer.
