THE REDISTRIBUTION OF SOLUTE IN 10% WT FRUCTOSE SOLUTIONS IS ANALYZED FOR DIFFERENT COOLING RATES RANGING BETWEEN 28 AND 45 W/(M2 K) EXTERNAL HEAT TRANSFER COEFFICIENTS AND INSTABILITY CONDITIONS. SOLUTE REDISTRIBUTION WAS FOUND TO BE ACCEPTABLY PREDICTED BY THE TWO-PARAMETER MODEL HERE PROPOSED.
