Summary

Celery is a vegetable which belongs to the Apiaceae family and cultivation of many varieties is widespread in Poland. Long-term storage of celery is possible by using conservation methods, mainly freezing. The aim of the experiments was a preliminary evaluation of aptitude of the Feniks variety for freezing and determination of the blanching and freezing parameters appropriate for celery treatment. Based on experimental results, freezing parameters and composition of blanching dilution were established. Blanching in 2% citric acid solution at 80 °C for 90 seconds, favourably influenced the bright colour and the tissue structure. Optimal freezing rate (4.6 cm/h) provided minimum drip loss.
