Summary

PEELED BANANAS ARE SLICED AND FREEZE-DRIED AFTER TREATMENT WITH SULPHITE (OR NOT). THEIR STABILITY DURING STORAGE AT DIFFERENT TEMPERATURES IS EVALUATED. THE EFFECTS OF SULPHITE TREATMENT AND OF THE TYPE OF PACKAGING (AIR, CO2) ARE STUDIED. THE RESULTS SHOW THAT STORAGE TEMPERATURE HAS A SIGNIFICANT EFFECT ON THE COLOUR OF THE POWDER. PRODUCT BROWNING IS MORE INTENSE AT 45 DEG C THAN AT 30 DEG C. THE SAMPLES TREATED WITH SULPHITE OR PACKAGED IN A CONTROLLED ATMOSPHERE GIVE A BETTER COLOUR.
