THE PAPER DESCRIBES A RESEARCH ON RAINBOW TROUT INTENDED TO STUDY THE STABILITY OF FILLETS, LOIN FILLETS AND MINCES OBTAINED FROM THE REMAINDERS AFTER FILLETING, AS WELL AS FROM THE VENTRAL AND CAUDAL REGIONS RESULTING FROM THE PREPARATION OF LOIN FILLETS, WITH AND WITHOUT ADDITIVES, AND VACUUM-PACKED. UNDER THE EXPERIMENTAL CONDITIONS TESTED, AND ESPECIALLY BECAUSE OF THE VACUUM-PACKING, ALL THE LOTS ARE KEPT UNDER SUITABLE CONDITIONS FOR ONE YEAR AT 255 K.
