THE STUDY OF THE STABILITY OF THE MINCES WITH ADDED PROTEIN PROTECTORS AND ANTIOXIDANTS, VACUUM-PACKED ANDSTORED AT TEMPERATURES HIGHER THAN THOSE CONVENTIONALLY USED, CAN LEAD TO SUBSTANTIAL ENERGY SAVINGS. ALL THE LOTS HAVE MAINTAINED AN OPTIMUM QUALITY AFTER ONE YEAR OF COLD STORAGE, EXCEPT THE LOT KEPT AT 261 K WITHOUT ADDITIVES.
