Summary

The cold storage chain is the main technology to protect the quality of perishable products. In this paper, the market developing trends of vegetables, fruits, meat products, aquatic products and cold beverage in China are described. The status and the shortcomings of the cold storage chain technology were analyzed from the process of the cold storage chain including precooling technology, refrigerated transportation technology, cold store technology, and end technology of the cold storage chain. In addition, some suggestions of the development of the cold storage chain technology are presented, such as ice-temperature technology and wireless information management.
