Summary

Unpacked control fruit peel turned yellow after 3 weeks at 14 °C, while fruit stored in bags alone turned yellow after 4 weeks. Bananas stored in bags with ethylene absorbent (EA) and carbon dioxide scrubber (CS) remained green for 6 weeks, had no visible symptoms of chilling injury, regardless of the inclusion of either EA or CS or both. Disease incidence and the development of off-flavours were reduced by CS. Modified atmosphere packaging of bananas in bulk could permit efficient transport by sea, rather than by air freight.
