Summary

Minimally processed Smooth Cayenne cv. pineapples were stored under a modified atmosphere for 8 days at 5 °C and 85% RH. Titratable acidity, total soluble oils, pH, drainage liquid, total pectin, and soluble pectin, firmness, polyphenol oxidase (catechol oxidase) and polygalacturonase were analysed at 2-day intervals. The following treatments were used: modified atmosphere with injection of 5% O2 and 5% CO2; 2% O2 and 10% CO2, and untreated control. The modified atmospheres had a detrimental effect on pineapple tissues by simulating polyphenoloxidase activity. Polygalacturonase activity was reduced with modified atmospheres. Minimally processed pineapples had a shelf life of 6 days.
