Summary
The recent development of small pressure-swing absorption units to partition air into its separate components could be used to provide a CA storage compartment in home refrigerators. The objective of this research was to evaluate the effect of the periodic interruptions that would occur to the CA and refrigerated temperature during meal preparation on the overall visual quality of a number of commercially obtained fresh fruits (apples, oranges, strawberries) and vegetables (asparagus, cabbage, cucumber, whole and processed lettuce, tomato and zucchini). A subjective assessment was made daily during storage at 5 deg C in air or 2% oxygen for up to 2 weeks. Interrupting the CA with air for as little as 0.5 minutes daily significantly reduced the beneficial effect of CA. When the duration and temperature of the interruption was extended to 15 minutes and raised to 20 deg C, all the benefits of CA were lost. To realize the full advantage of CA over air, the packaging of the produce and the refrigerated storage compartment must be configured to allow removal of individual servings with minimal disruption of the CA.
