VACUUM-PACKED HAKE, EITHER DIPPED IN SODIUM POLYPHOSPHATE OR WITHOUT DIP, WAS IRRADIATED WITH 3.3 KILOGRAYS, AND THEN STORED AT 273 K (0 DEG C), MORE OR LESS 1 K. A THIRD LOT, AIR-PACKED, WAS FROZEN AT 238 K (-35 DEG C) AND STORED AT 253 K (-20 DEG C), MORE OR LESS 2 K. HAKE TREATED WITH 3.3 KILOGRAYS, WITHOUT SODIUM POLYPHOSPHATE DIP, MAINTAINED TRADE QUALITY UP TO 49 DAYS AFTER CATCH. TOTAL VOLATILE BASIC NITROGEN LEVEL REMAINS ACCEPTABLE UP TO DAYS 40 AND 45, FOR SAMPLES IRRADIATED WITHOUT AND WITH POLYPHOSPHATE DIP. TEXTURE (PHYSICALLY MEASURED) VALUES OF BOTH IRRADIATED SAMPLES WERE HIGHER THAN ON THE FROZEN HAKE. THERE WERE NO SIGNIFICANT DIFFERENCES DUE TO THE POLYPHOSPHATE TREATMENT. SENSORY EVALUATION RESULTS ON BOTH IRRADIATED HAKES WERE GENERALLY GOOD.
