STUDIES ON THE FREEZING PROCESSES IN AQUEOUS MODEL SYSTEMS.

Summary

FOR ICE TO BE PRESENT IN A FROZEN AQUEOUS SYSTEM, IT IS NECESSARY FOR ICE CRYSTALS TO FORM AND NUCLEATE. DURING STORAGE IN THE FREEZER, ICE CRYSTAL RIPENING MAY ALSO OCCUR. ALL THESE STAGES CONTRIBUTE TO THE APPARENT STRUCTURE OF THE SYSTEM. THESE PROCESSES WERE STUDIED IN AQUEOUS MODELS. HETEROGENEOUS NUCLEATION WAS INVESTIGATED USING FOOD GRADE POLYMERS. DENDRITIC ICE GROWTH WAS OBSERVED WITH THE CRYOMICROSCOPE ON THIN FILMS OF SUGARED AQUEOUS SOLUTIONS, FROZEN AT DIFFERENT COOLING RATES. ICE CRYSTAL RIPENING RATES AND THE EFFECTS OF ADDED POLYMERS ON THESE RATES WERE STUDIED IN SUGARED AQUEOUS SOLUTIONS AT 267 K (-6 DEG C).
