This presentation examines the factors which influence heat transfer, ice crystal nucleation processes, freeze concentration, and molecular mobility to arrive at a fuller appreciation of the mechanics of the freezing process. It also identifies the properties of frozen systems that have an influence on frozen storage stability, in particular those which can help enhance our understanding on frozen storage stability, in particular those which can help enhance our understanding of the temperature dependence of frozen storage stability.
