Summary

STORAGE OF INDIAN OIL SARDINE (SARDINELLA LONGICEPS VALENCIENS) IN CHILLED SEA WATER USING ICE WITH PROPYL PARABEN (PROPYL-P-HYDROXY 4-BENZOATE) ADDED WAS STUDIED. THE FISH WERE STORED IN CHILLED SEA WATER IMMEDIATELY AFTER CATCH AND WERE EXAMINED PERIODICALLY FOR BIOCHEMICAL, PHYSICAL, MICROBIOLOGICAL AND ORGANOLEPTIC QUALITY CHANGES DURING THE STORAGE PERIOD. THE USE OF PARABEN ICE EFFECTIVELY CONTROLLED THE BACTERIAL PUTREFACTION TO SOME EXTENT, THEREBY INCREASING THE SHELF LIFE OF FISH. THE VALUES OBTAINED ON THE DAY OF SPOILAGE FOR TRIMETHYLAMINE, VOLATILE BASE NITROGEN, FREE FATTY ACID, TOTAL PLATE COUNTS AND MANY OTHER TESTS WERE QUITE LOW, THUS INDICATING THE BACTERIOSTATIC EFFECT OF THE CHEMICAL.
