Summary

RESULTS OF INVESTIGATIONS ON SOUTH ATLANTIC HAKE. THE QUALITY AND STORAGE LIFE WAS DETERMINED DURING VARIOUS SEASONS OF THE YEAR, DURING STORAGE WITH ICE AND IN CHILLED SEAWATER (CSW), AND IN DEPENDENCY OF VARIATIONS IN THE HANDLING PROCEDURES. A MAXIMUM STORAGE LIFE OF TWO WEEKS IRRESPECTIVE OF THE SEASON OR THE HANDLING AND STORAGE METHOD APPLIED. THE QUALITY LEVELS TENDED TO BE HIGHER IF OVERFILLING OF THE BOXES WAS AVOIDED, IF THE HAKE WAS GUTTED, OR IF STORAGE TOOK PLACE IN CSW. LARGER SIZED HAKE RENDERED LOWER YIELD THAN SMALLER HAKE. FOR UNGUTTED FISH THE YIELD WAS LOWERED BY 0. 5 TO 0.7% PER DAY, AS THE STORAGE TIME INCREASED, WHILE THE YIELD OF GUTTED HAKE REMAINED ALMOST CONSTANT.
