Summary
The authors have studied a time-temperature integrator used in reflectometry to predict the commercial shelf life of chilled and pre-packed foodstuffs (minimally processed endive and sliced cooked ham). Under isothermal conditions, integrators have reproduced the temperature cycles observed between the shipment time and the installation in display cabinets. The authors measured the changes in the microbiological quality of these products.
