Summary

Aliment 2002 is a French research programme in agriculture and agro-food technology, started on the initiative of the Ministry of Higher Education and Research and the Ministry of Agriculture and Fishing. The research done was presented on October 19 and 20, 1993, and has been compiled in this book. The topics are the future production of food -of plant and animal origin-, equipment, biotechnologies, agro-food processing, quality, toxicology, non-agricultural valorization of agricultural products. Much research related to refrigeration is described in the "Studies and Research" Section of this issue of the Bulletin.
