Summary

EARLIER RESULTS LED TO THE ASSUMPTION THAT MITOCHONDRIAL DAMAGE DURING THE FREEZING OF MUSCLE TISSUE IS CAUSED RATHER BY OSMOTICALLY DETERMINED REMOVAL OF WATER FROM THE MUSCLE CELL THAN BY THE MECHANICAL ACTION OF ICE CRYSTALS. IN ORDER TO LOOK FURTHER INTO THIS QUESTION THE AUTHORS COMPARED THE INFLUENCE OF FREEZING ON THE ONE HAND AND OF FREEZE-DRYING OF THE SAME TISSUE ON THE OTHER HAND ON THE RELEASE OF THE MITOCHONDRIAL ENZYMES. IT WAS FOUND THAT THE FREEZE-DRYING BRINGS ABOUT A GREATER RELEASE OF THE ENZYMES INTO THE SARCOPLASM THAN THE FREEZING PROCESS ALONE. IT CAN BE REGARDED TO SOME EXTENT AS A CONFIRMATION OF THE DEHYDRATION THEORY OFFERED AS AN EXPLANATION OF DAMAGE TO MUSCLE MITOCHONDRIA BY FREEZING. THE FREEZE-DRYING OF MEAT CAUSES GREATER DAMAGE TO CELL MEMBRANES THAN THE FREEZING PROCESS ITSELF.
