Summary

THE PURPOSE OF THE STUDY IS DETERMINING THE FREEZING SUITABILITY OF SOME FRUIT AND VEGETABLE VARIETIES. THE PRODUCTS WERE NANTES CARROTS, KARTAL LEEK, MATADOR SPINACH, CABBAGE, KUTAHYA, TEKIRDAG AND MACAR SOUR CHERRIES. THE SAMPLES FROZEN TO 233 K (-40 DEG C) WERE STORED 9 MONTHS. THE CHANGES DUE TO STORAGE WERE FOLLOWED ON THE DRY MATTER CONTENT, PH, VITAMIN C CONTENT AND ORGANOLEPTIC PROPERTIES. ALMOST ALL PRODUCTS APPEAR SUITABLE FOR FREEZING.
