THE QUALITY OF FROZEN STRAWBERRIES WAS CHECKED OVER 2 YEARS IN ORDER TO DETERMINE THE PERCENTAGE OF JUICE, RESIDUAL ACIDITY AND PH AND COLOUR BY REFLECTANCE. SOME CULTIVARS WERE WELL SUITED TO QUICK FREEZING. THE SENSORY EVALUATION OF APPEARANCE, TASTE AND FIRMNESS CONFIRMED THE GOOD QUALITY CHARACTERISTICS OF CARDINAL, FERRARA AND SELEZIONE 80.52.1.
