THE QUALITY OF FROZEN STRAWBERRIES WAS CHECKED FOR 2 YEARS DETERMINING PERCENT JUICE DRIP, RESIDUAL ACIDITY, PH AND COLOUR BY REFLECTANCE. SOME CULTIVARS APPEARED WELL SUITED TO QUICK FREEZING BECAUSE THEY HAD A LOW JUICE DRIP. ALSO THE SENSORY EVALUATION OF APPEARANCE, TASTE AND FIRMNESS SHOWED THE GOOD QUALITY OF CARDINAL, FERRARA AND OF THE SELECTION 80.52.1.
