Summary
Antifreeze protein discovered from blood serum of Antarctic fishes has the ability to inhibit ice crystal growth and to protect cold-sensitive cells from hypothermic damages. The functions of AFP were expected to provide new technologies for quality storage of frozen foods, and hypothermic preservation of useful cells.
