Summary

THE AUTHOR GIVES DATA FROM 1984/85 INVESTIGATIONS INTO THE CHARACTERIZATION OF VARIETIES SUITABLE FOR MEETING THE TECHNOLOGICAL AND ECONOMIC REQUIREMENTS OF FROZEN AND CANNED FOOD INDUSTRIES UNDER ITALIAN SOIL AND CLIMATE CONDITIONS. AMONGST THE NUMEROUS TESTED VARIETIES, THOSE SUITABLE FOR FREEZING AND CANNING WERE DETERMINED, WITH QUALITATIVE CHARACTERISTICS SIMILAR TO THOSE OF PRESENTLY GROWN VARIETIES. IT WAS SHOWN THAT SOME COMMERCIAL VARIETIES (SPRING, MARS AND WOLF) ARE SUITABLE NOT ONLY FOR FREEZING BUT ALSO FOR CANNING. THIS DUAL SUITABILITY IS A VERY INTERESTING TECHNOLOGICAL AND AGRONOMICAL RESULT. THE MOST SIGNIFICANT DEFECTS ARE CONSISTENCY OF THE FROZEN PRODUCT AND NON-UNIFORM COLOUR FOR CANNED PRODUCTS. A. M.
