THE UMBELLIFERONE FLUORESCENCE LABEL IS USED AS A TOOL TO MONITOR TEMPERATURE DURING RAPID COOLING. IN A FIRST TEST DROPLETS OF AQUEOUS LIPOSOME SUSPENSIONS ARE RAPIDLY COOLED DOWN FROM 283-200 K. DIFFERENT COOLING CURVES OBTAINED FOR LABELLED SOLUTION AND LABELLED BILAYER MEMBRANE REVEAL DETAILED TEMPERATURE CHANGES IN THE MEMBRANE DUE TO THE RELEASE OF LATENT HEATS.
