Summary

THE PRIMARY CONSTITUENTS OF THE MAIN SIX GROUPS COMPOSING GOLDEN DELICIOUS APPLE WERE IDENTIFIED AND THEIR DEVELOPMENT WAS FOLLOWED DURING THE GROWTH AND STORAGE OF FRUIT AT 2 DEG C IN A CONTROLLED ATMOSPHERE (5% CO2 -3% O2 ) AT 97% RELATIVE HUMIDITY: VOLATILES, SOLUBLE SUGARS AND ORGANIC ACIDS, AMINOACIDS, PHENOL COMPOUNDS AND MINERALS. THEIR EFFECTS ON ORGANOLEPTIC PROPERTIES WERE STUDIED. THE ANALYSIS SHOWED THAT ETHYL AND AMYL BUTYRATES, GLUCOSE AND QUINIC ACID ARE FAVOURABLE AT A LOW CONTENT, WHEREAS BUTYL BUTYRATE, SORBITAL AND CALCIUM ARE AT A HIGH CONTENT.
