Summary

This paper explains what an air cycle is and why it should be developed for food freezing. It then presents design data for an air cycle plant freezing beef burgers, showing that the freezing time can be reduced to 66% of that in a conventional ammonia freezer. A comparison between ammonia, air cycle and liquid nitrogen freezers shows that the air cycle compares well in terms of freezing time, weight loss and cost.
