Summary
The French domestic seafood market is growing, especially for chilled fish, sales in which, after a drop from 1989 to 1992, have gone up again since 1993. Frozen food has done quite the opposite: following a spectacular rise up until 1993 (25% growth in six years), it has fallen 6%. Among the trends: more aquaculture products, more and more purchases at supermarkets, new advances in storage and in cooking ease. The French seafood trade deficit grew another 10% from 1994. Supermarkets have continued their growth, thanks to their own brand names. Shrimps and shellfish accounted for 80% of seafood imports.
