Summary

The Romanesco cauliflower cv (Brassica oleracea L., Botrytis group) has some interesting characteristics that make it suitable for freezing, for example it can be easily mechanically decorated in small florets. In the research, the Romanesco florets were blanched in boiling water or by steam until peroxidase inactivation was reached, individual quick frozen and stored at -20 °C for ten months. A series of chemical, mechanical and organoleptic tests were performed. The water blanched product gave the best results regarding the stability of the analytical parameters and was preferred by the panellists.
