Summary

In order to meet consumer demands, an audit was carried out on all the links in the cold chain for certain refrigerated products. The 314 temperature curves collected represent a very large amount of data. The results, reported in this article, were presented by ANIA (the French national association of food industries), at the end of January, during the 2004 Traceability Exhibition.
