Summary

THE PRESENCE OF ODOURS GIVEN OUT BY THE STORED VEGETABLES CAUSES A CONSIDERABLE LOSS OF QUALITY AND A REDUCTION OF THE PERIOD OF STORAGE. SO, IT IS POINTED OUT BOTH THE BENEFITS OF THEIR ELIMINATION AND ALSO THE PROPOSED METHODS FOR GETTING RID OF THESE VOLATILE SUBSTANCES FROM THE CELLS. IT IS SHOWN THAT THE MOST VALID SYSTEM IN THE OPERATIVE PRACTICE IS THE WASHING OF THE AIR IN TOWERS WITH WATER OR A SOLUTION OF PERMANGANATE.
