The export cool-chain for Australian grapes and broccoli: transport by road, sea and air.

Summary

A comprehensive study has been made of two horticultural products currently exported in commercial quantities from Australia. Temperature records were constructed covering the whole export cool-chain, from the time of harvest until retail sale in the overseas market. Temperatures were converted to heat accumulation units, as an approximation to the effect of temperature on product quality. Much of the loss of quality is seen to arise during transport by air and sea, and some during storage.
