EFFECTS OF SODIUM CHLORIDE, PH, ATMOSPHERE (VACUUM PACKAGING) AND AMBIENT MICROFLORA ON THE GROWTH AND/OR VIABILITY OF A. HYDROPHILA IN MINCED PORK. THIS STRAIN IS SENSITIVE TO A PH LOWER THAN 6.0, INHIBITED BY SODIUM CHLORIDE (3%) AND HINDERED BY THE PRESENCE OF NATURAL MEAT MICROFLORA.
