Summary
The aim of this research is to define the influence of storage time on microflora and smell of Mullard ducks' breasts and legs which were vacuum-packed. The growth of anaerobic sporogenous bacteria was stated. During storage the following changes were observed: poor growth of Pseudomonas spp. bacteria, considerable increase of total count of bacteria and anaerobic sporogenous bacteria.
