PASSE-CRASSANE PEARS STORED AT 4 DEG C REACH THEIR RIPENING STATE IN THREE MONTHS; THE HAZARD OF INTERNAL BREAKDOWN NEVER APPEARS, WHICH IS NOT THE CASE AT 0 DEG C. THE AUTHORS REPORT THE INVESTIGATIONS UNDERTAKEN AND OBSERVE THAT THE BIGGEST FRUIT ARE THE MOST SENSITIVE TO BREAKDOWN. THE CHARACTERISTICS OF MINERAL NUTRITION IN RELATION WITH BREAKDOWN SEEM TO BE AN INTERESTING LINE OF INVESTIGATION. CONTROLLED ATMOSPHERE HAS A BENEFICAL ROLE, REDUCING THE EFFECT OF ORCHARD FACTORS; ON THE OTHER HAND, IT IS LESS EFFECTIVE FOR THE INTERNAL BREAKDOWN OF FRUIT OF NORMAL AND LATE HARVESTING. G.G.
