Summary

FREEZING RATE AND LOW STORAGE TEMPERATURES ARE OFTEN OF VERY LITTLE IMPORTANCE FOR FOOD QUALITY. SIMILARLY TEMPERATURE FLUCTUATIONS HAVE NO EFFECT ON PRODUCT QUALITY. VERY STRICT REGULATIONS HAVE BEEN ENFORCED FOR FROZEN FOOD TRANSPORT, ALTHOUGH THE EFFECT ON PRODUCT QUALITY IS MINIMAL. RELATIVELY LITTLE ATTENTION HAS BEEN PAID TO HANDLING AT SHIPPING AND RECEIVING ENDS, ALTHOUGH MAJOR QUALITY LOSSES CAN OCCUR HERE. TO MAINTAIN LOW TEMPERATURE IN RETAIL CABINETS IS SUGGESTED WHICH WOULD BE ENORMOUSLY COSTLY IN CAPITAL INVESTMENT AND ENERGY CONSUMPTION.
