Summary
Storage conditions of vegetables are not without influence on the stability of chlorophyll pigments, which is why studies were undertaken to determine the kinetic parameters of degradation of these dyes during frozen storage of vegetables. Research material consisted of zucchini, green peas and leeks stored in conditions of freezing.
