Summary
Many of the factors which are believed important in achieving high quality refrigerated food storage are unproven, and may be unnecessary. These include the need for fast freezing rates and for very low temperatures and the avoidance of storage temperature fluctuations. The risk of food deterioration appears highest in display cabinets but more stringent regulations should not be applied without establishing that the very high additional power and capital costs are justified.
