Summary
As liquid ice is a mixture of ice crystals and water, the total surface area for heat exchange is very large in comparison with that of a conventional ice storage system, therefore liquid ice melts instantly to meet varying cooling loads. To produce foods of good quality without raising bacterial counts, it is the best method to use chilled water sufficiently near 0 deg C.
