Summary
Water is the predominant constituent in most foods, so water content influences the thermal properties of foods significantly. Because the thermal properties of ice and water are quite different, the thermal properties of frozen foods vary dramatically with temperature. In this paper, the significance of the thermal properties of foods was discussed and a C programme was written to calculate the thermal properties of food at any possible temperature, then a polynomial model was proposed by using statistical analytical software.
