WITH THE IDEA OF OBTAINING A FINISHED PRODUCT OF SATISFYING QUALITY IT IS NECESSARY TO PROCEED TO A SUBDIVISION OF DIFFERENT CLASSES OF COLOUR. THE GREEN FRUIT CAN BE LEFT TO MATURE AND SUBJECTED TO TRANSFORMATION WHEN THEY HAVE REACHED AN IDEAL COLOUR SO AS TO OBTAIN A GOOD QUALITY. A STORAGE OF SHORT OR MEDIUM TERM DOESN'T CREATE ANY NOTABLE DISADVANTAGES ON THE CHARACTERISTICS OF THE TRANSFORMED PRODUCT. ONLY THE VAR. ANDROSS SEEMED TO LOSE SOME FIRMNESS DURING STORAGE.
