Summary
These proceedings contain the 16 papers presented in the workshop, held within the framework of COST Concerted Action 94, in Istanbul, Turkey, October 1-2, 1992. They cover a wide technical area such as technology of modified atmosphere packaging (materials, processing temperature, gas concentrations), safety (pathogenic bacterial growth, natural bacteriocides, modelling), and quality control (spoilage bacteria, detection systems, nutritional quality). Some of the papers will be abstracted in the IIR Bulletin.
