In order to assure a good quality level, the manufacturers should adopt the global quality concept; that means it is necessary to consider not only appearance factors but also all other elements such as safety and wholesomeness, nutritional value, sensory characteristics as well as the sale price and convenience. This paper examines every step of the whole process taking into account the risk factors and the technological innovations that could solve some problems.
