VARIOUS LOTS OF GOLDEN DELICIOUS APPLES WERE STORED IN AIR OR UNDER CONTROLLED ATMOSPHERE TILL THEIR L-MALATE CONTENT REACHED 0.39-0.45% OF THE ORIGINAL FRESH WEIGHT. THE APPLES WERE THEN SUBJECTED TO SENSORY TESTS. THERE WAS NO CORRELATION BETWEEN THE MALATE CONTENT OF APPLES AND THEIR REJECTION FOR UNACCEPTABLE FLAVOUR. THE APPLES JUDGED AS UNACCEPTABLE WERE THOSE STORED 161 TO 173 DAYS IN AIR OR 257 TO 269 DAYS UNDER CONTROLLED ATMOSPHERE. (Bull. bibliogr. CDIUPA, FR., 13, N.10, OCT. 1979, 135989.
