Summary

Anisakis larvae form cysts in the viscera and muscles of many types of fish. Freezing is required in order to ensure fish safety, but recent publications have demonstrated that these larvae can be resistant to freezing. This study demonstrated that the larvae are frozen along with their surrounding media. The larvae do not survive following freezing at -15 °C, but certain larvae are capable of survival following freezing at -10 °C.
