Summary
The market for quick-frozen herbs is progressively increasing to the detriment of the market for dried herbs. This market is reviewed in various European countries, from consumption and production points of view. In France, a new firm was recently created in Brittany, which sells quick-frozen herbs from fresh products or from products imported from South-Eastern Asia (green pepper, citronella). At present, this firm only supplies industry, but the new brand (Gyma) will shortly be available for retail sale. Y. G.
