Summary

The storage life of different deboned fish species stored in fresh water ice varies from 8 to 14 days and those of non-deboned fish from 2 to 7 days. The paper explains these differences by an analysis of biological and thermodynamic data. The main guidelines for use of ice, in terms of heat balance (chilling of fish, maintaining temperature at 0 deg C) and in terms of cooling rate are outlined. The use of ice for the storage of fish (whole, bled or not, or fillets) on board can be done in bulk or in boxes. The paper indicates the technical requirements, advantages, and disadvantages of the two methods. The same regulations are in force for the distribution network, as the most common method is iced transport in polystyrene boxes. The quantity of icing must be sufficient. Y.G.
