Summary

THE FINITE ELEMENT METHOD WAS APPLIED TO THE PREDICTION OF THE FREEZING TIME OF DICED POTATOES IN A BELT FREEZER WITH DOWNWARD AIR CIRCULATION. FREEZING TESTS WERE CARRIED OUT WITH TWO DIFFERENT POSITIONS OF DICES: IN SUSPENSION OR LAYING ON THE BELT. THERMOPHYSICAL PROPERTIES APPEAR TO DEPEND ON TEMPERATURE. THE RELIABILITY OF THE PROGRAM WAS CHECKED EXPERIMENTALLY.
