Spanish translation of a paper presented at the IIR meeting in Lexington, 1996.10.02-04. See IIR Bulletin , reference 97-1537. Experimental data are presented for the temperature histories during quick precooling of fruit and vegetables in an industrial wind tunnel system. Approaches for prediction of the cooling time and the air flow pressure losses are given. The influence of the precooling on the food quality and shelf-life is also considered.
